TRADITIONAL CALCUTTA SAUSAGE CURRY

Tray Mac Marshall Calcutta
medium sized onion finely chopped
tablespoon tomato paste
small bunch fresh coriander
Heat oil in a heavy based pan and fry onion till golden brown.
Add sausages and fry on low heat till well browned.
Add tomato paste and continue frying on low heat for 3 minutes.
Add water and cook for 5 minutes.
Garnish with finely chopped fresh coriander and serve with rice.
