STUFFED CHICKEN

 

 Preparation time : 15 minutes

Cooking time       : 45 minutes

 1 large chicken

3 Goa Sausage

1 large potato, boiled and cut into cubes

1/2 onion leek, chopped

1 cup chopped mushrooms

1 cup toasted bread cubes (cut 3 slices of bread into cubes and grill till

golden brown)

1/2 cup cashew nuts

1/2 cup frozen peas

1/2 carrot, cut into cubes

1 cup white wine

2 Tablespoons Oil

 1.  Chop the Goa Sausage and cook in white wine for 10 minutes or until all

      the wine evaporates. 

2.  Heat oil in a heavy-based pan, add onion leek and fry till golden brown,

     next add all the remaining ingredients except the bread cubes, and cook

     till the mushrooms and carrots are tender.

3.  When the above mixture has cooled add the bread cubes and stuff the

     chicken.

4.  Bake in the oven at 200 degrees centigrade covered with foil, for 30

     minutes.  Remove foil and bake for a further 15 minutes till golden brown.
