SPICY SHRIMP LOAF

Preparation time : 30 minutes

Cooking time       : 1 1/2 hours

Serves                  :  6 - 8 people

 1 un-sliced white cylindrical loaf of bread

250 grams minced shrimps

100 grams finely chopped Goa Sausage

2 spring onions, chopped

1 small red capsicum, chopped

2 tablespoons mushrooms, chopped

2 tablespoons black olives, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon fresh basil, chopped

1 cup of grated Cheddar cheese

1/2 cup Sherry

1.  Preheat oven to moderate 180 degrees centigrade.  Cut one end off loaf

     of bread, reserve.  Scoop out centre, leaving a 1 cm layer; use the centre

      to make a cup of fresh breadcrumbs.

2.  Combine the breadcrumbs in a large mixing bowl with the shrimps,

     spring onions, capsicum, mushrooms, olives, parsley, basil, cheese

      and sherry and spoon into loaf.  Replace end of loaf and hold in position

      with toothpicks.

3.  Place loaf on oven tray, cover with aluminium foil and bake for 40 minutes.

     Remove foil and bake for a further 30 minutes.  Stand 10 minutes and

     serve sliced.
