PITA POCKETS

Preparation time : 10 minutes

Cooking time       :  15 minutes

Serves                  :   6

200 grams Goa Sausages

500 grams beef, lamb or chicken mince

1/2 cup finely chopped pine nuts

4 spring onions, finely chopped

2 cups finely sliced lettuce

1 carrot, grated

1 cup diced mushroom

6 Pita bread

Sour Cream Sauce

3/4 cup Sour cream  

1 clove crushed garlic

1 tablespoon finely chopped coriander

1 tablespoon finely chopped mint

 1.  Chop the Goa Sausage and cook with mince on low heat with 1 cup water

     till water evaporates and stir fry in the fat that emerges till mince is dark     

     brown.  Add the chopped mushrooms, walnuts and spring onions and

     stir fry for a further 5 minutes.

2.  To make Yoghurt Sauce : Combine all the ingredients and refrigerate

      till required.

3.  Cut pita pockets in half, spoon in filling, top with carrot, lettuce and

      sour cream sauce.
