COCONUT CURRY WITH CALCUTTA SAUSAGES

Serves                    4

 1 packet Mac Marshall Calcutta Sausages

1 medium sized onion, finely sliced

1 cup coconut milk

1 tablespoon oil

1 small bunch coriander leaves

2 green chillis

 1.  Heat oil in a heavy based pan, add onion and stir-fry till onions are golden

      Brown.

2.  Cut sausages into individual lengths, add to the onion and

      Fry on low heat to a golden brown.

3.  Add coconut milk and cook uncovered for five minutes on medium heat.

4.  Garnish with chopped green chillis and fresh coriander.
